Ingredients (for 4 people):
- 500 g of clean wild chicory
- 500 g of fresh or frozen beans
- 1 onion
- Extra virgin olive oil
- Garlic (optional)
Peel the beans and cook in two thirds in boiling water; When they are cooked, add the salt to the water and let the heat act for another minute. Remove the fire beans and use the salt water to boil the chicory. At the same time let the finely chopped onion brown with oil.
Grind the beans with a fork or, better, with a food processor, adding a little cooking water to make everything a little easier. Pour the mixture in the pan with the golden onion, add the raw beans, mix and extinguish the fire. When the chicory is cooked, drain, squeeze a little, finely chop and sauté in a frying pan with olive oil and pepper (and garlic if desired). Serve next to the ground beans, sprinkle everything with an excellent extra virgin olive oil.
At the dinner table, this dish is eaten by joining the chicory and beans in a single bite, where the sweetness of the beans and onion complement the bitterness of the wild vegetables. As an alternative to fresh beans can be used the dried and desgranados, moistened the previous day.
