Ingredients (serves 2):
- 2 bunches of mastrici grasses not exceeding 10-15 cm
- 1 egg yolk
- 1/2 lemon
- 2 tablespoons olive oil extravegine
Prepare the ingredients, then boil the bunches in boiling salted water for 4-5 minutes; Drain and rinse with cold water to stop cooking. They have a strong taste and, if it is too bitter, boil all the vegetables again for 2 minutes. At this point, set aside 6-7 bunches, which will serve to decorate the finished dish, and cut other small pieces.
Prepare the mayonnaise: in a glass place the egg yolks, gradually add the oil and lemon juice, stirring constantly with a spoon. Add the sauce thus obtained and use it to season the vegetables previously placed in a dish, decorate everything with the twigs to the side.
