Portulaca Flour Muffins

Ingredients (for 4):

  • 250 g of flour of mixture of the seeds of cereal and purslane (the latter should not be more than 50%)
  • 3 spoonfuls of sugar
  • 1/2 teaspoon instant yeast
  • 1 egg
  • 2 tablespoons oil
  • 1/2 cup milk
  • Salt

First grease the molds as well as muffins (you can also use a baking dish, getting a donut that can then be cut into smaller pieces after cooking). Mix the flour, sugar, salt and yeast in a bowl. Then add the beaten egg, oil and milk and stir gently but quickly. If necessary, adjust the consistency by adding more milk, so as to get a fluid mixture just enough to be able to pour.

At this point the dough distributes quickly in the molds (or in the pan) and bake at 200 ° C for 15-20 minutes or until a cut knife comes out clean.
